Both China and France have rich culinary traditions. One particularly beloved ingredient to both is duck. Our tea-smoked duck is a wonderful fusion of these two gastronomic epicentres. Once again, Le Passage Mohkan Shan has its own special recipe. We marinate our duck breast for two days in a dry sea salt rub then cover with coarse black pepper. It is then smoked for several hours over heat in a bamboo basket on top of uncooked rice and our own plantation’s tea leaves. The result is the most succulent piece of duck you’ll ever taste!
