WILD BOAR 野猪肉

We pride ourselves on buying locally and using fresh seasonal ingredients. Wild boar is indigenous to Moganshan. Its rich gamey taste is the ideal food for the winter months. The way we prepare our wild boar is a real labour of love; the meat is marinated in red wine, spices and vegetables for 3 days and then braised until tender and succulent.

PHEASANT 雉鸡

During the winter months, you will quite often spot a pheasant or two strutting through the hotel grounds and appearing from the hedgerow. It is a little known fact that pheasants actually originated from China; it is home to 35 different species. The Elliot's Pheasant is just one species that makes Moganshan its home.

Andrew looks forward to making you feel at home at Le Passage. Our treasured Maître de Maison has been working at Le Passage since the hotel was just a building site. Andrew is quite the host; his easygoing nature and attention to detail ensures each guest feels Le Passage is a home away from home. You'll find him coordinating activities and adding that "je ne sais quoi". For example, the small bouquet of roses, when in season, is given to every guest on departure. He also holds one of the most important (and most fun) jobs at Le Passage – looking after Bian Bian and Tiger – our resident canine duo!

FIRST FOREIGNER TO BUY LAND IN MOGANSHAN
首个在莫干山置地的外国人

To escape the overwhelming heat of Shanghai, Reverend Farnham, looked to Moganshan as an inexpensive option to spend time with his family during the summer. In the late 1890s, he bought thirty hectares of a tea plantation for a mere 50 Mexican dollars–making him the

first foreigner to buy land on the mountain. He started a trend. Rev. Joseph Baile followed by Mr. Edward Evans bought the next plots of land. By the 1930s more than 300 foreigners and hundreds of Shanghai elite called Moganshan their home during the summer. Le Passage guests can experience the charm that enticed those to Moganshan in the 1900s.
